Acerca del Autor
Nicole Salgado is of both Mexican and European descent, and grew up in Central New York. She holds a B.S. from Cornell University, and an M.A. from San Jose State University. A biologist and educator by training, she is also an avid artist. Nicole was exposed to authentic Mexican cooking early on, during travels to Mexico, and while living in the San Francisco Bay Area. Since 2006, she has lived in her husband's home state of Querétaro, Mexico. There she was exposed to her extended family's traditional corn farming practices and the preparation of nixtamal among other native Mexican foods. In an effort to combine their passion for good food and environmental well-being, she and her husband undertake a number of sustainable projects such as an organic garden.
